At your local market, picking a well-marbled rib is not that hard, most cuts of prime rib are well-marbled and if seasoned and prepared properly they will turn out delicious. We always ask our butcher to cut the bone off the rib roast and then tie it back on. This way we get all the flavor of the bone-in rib roast but it makes carving so simple.

Ingredients for the rub:

for a 3 pound Standing Rib Roast (allow for about 1/2 pound per person)

  • 3 cloves garlic, minced
  • 3 Tablespoons Cracked Black Pepper
  • 2 Tablespoons Kosher Salt
  • 3 Tablespoons Season Salt
  • 1 Pinch of Brown Sugar

Instructions:

  • Combine dry seasonings with the garlic in a small bowl. Blend well

  • Rinse meat and pat dry

  • Rub seasons into and all over meat generously

  • Place in the large roaster with a rack. Do not cover or add water

  • 3-5 hours before serving, place rib roast in a preheated 375-degree oven and bake for 1 hour (for medium rare) or 1 1/2 hours (for medium)

  • Turn oven OFF but do NOT open the oven door. Roast may be in oven up to 2 hours and DO Not open oven door

  • About 40 minutes before serving turn oven to 300 degrees, cook for 40 minutes

  • Remove from oven and let rest prior to carving.
